Those who live in Veneto know it well: March also has a distinctive flavor. It is the season of bruscandoli, the shoots of wild hops that grow spontaneously along riverbanks, paths and rural ditches. Together with carletti and the first wild herbs, they mark the beginning of the local foraging season.
These are simple ingredients, but deeply tied to tradition. In restaurants and taverns they begin to appear on spring menus: risottos, omelettes and fresh pasta that tell the story of a seasonal, essential and territorial cuisine.
